I don’t know about you, but breakfast is usually a hard meal for me. I’m typically running late, scrambling to find my keys, bag, etc. I know that breakfast is the most important meal of the day, but I usually end up grabbing a cookie from the cookie jar on my way out, or just coffee. If I do have any spare time, it might be a bowl of cereal that will leave me hungry 10 minutes later. I’m tired of eating ALL of my lunch that I’ve packed before 10 am, because it means that I will talk myself into swinging through a drive through on my way home for a “Snack.” It’s a vicious breakfast cycle.
But I say NO MORE to to yucky power bars, or breakfast food that doesn’t stick with you. This morning I truly amazed myself. I did something really unthinkable. I made this scrumptious, beautiful breakfast sandwich:
In SIX MINUTES!!!!!
6 minutes people. Six. If i can do this, I know you can!! This beauty includes: 1 whole grain english muffin, 1 egg, baby spinach, red onion, sun-dried tomatoes, and gruyere cheese. Fresh ingredients for a fancy breakfast! There are many variations to the breakfast sandwich. You can basically put anything you like on it. These are just the things I had in my fridge. Here are a few tips as to how I made it so fast (six minutes, remember?)
1. Have your ingredients ready to go in the front of your fridge the night before.
2. Simultaneously toast your english muffin and get your pan hot for the egg.
3. Put your egg on a really hot pan. When the egg touches the pan, it only takes a second before it’s ready to be flipped!
And VIOULA! You start your day off fancy, fresh, and you might even eat your lunch AT LUNCHTIME with your co-workers.
